Arguably the best value steak on the site. If you can’t tell by now, I’m a huge fan of Denver steaks. I wanted to have a few options of that cut that are all notably different experiences from each other.
Despite being the cheapest Denver option, you really aren’t sacrificing anything. These are a prime grade, so the top 3% of all beef inspected by the USDA. It’s naturally a very well marbled cut, but these are exceptional. Most of them look closer to American Wagyu.
It’s an extremely versatile steak with a familiar flavor and very juicy due to its abundant marbling. You can make these a variety of ways. In the grill, in the pan, sous vide, Korean bbq style etc. You will not have a bad experience. My favorite use for them is for Galbi (pronounced Kai-bee), which is Korean marinated short ribs. They take to marinades exceptionally well.
