The Flat Iron is a lesser known steak, that is rarely offered in restaurants. When cut against the grain, the Flat Iron is one of the softest steaks you can find. With this cut specifically, I was looking for an exceptional amount marbling, and a clean beefy flavor, at a price that didn’t break the bank.
What I landed on was an Australian Wagyu BMS 6-7 from Stone Axe Farms. It’s juicy, tender, flavorful… everything you’d want in a great steak, all while not being overly expensive. Stone Axe had the exact flavor profile I was looking for with really impressive marbling (intramuscular fat).
They do over a BMS (beef marbling score) 7-8 and 9+, which are technically rated as “better,” but I didn’t think this minimal difference in overall experience was worth an extra $10+ per steak. At a BMS 6-7, the marbling is still super impressive, while the steak also has a great balance to it.
