The Australian Denver offers a flavor that is unique and noticeably different than our Prime & American Wagyu Denver. It’s more buttery, more tender, and slightly gamey in flavor.
The Australian Wagyu Denver steak that we currently offer comes from Margaret River and is a BMS 6-7. This is a “cheaper” option compared to other farms and higher marbling scores, but I believe it’s the most worth it for this specific cut. When testing all the Denver steaks from various Australian farms and with various marbling scores, I noticed that the experience was nearly identical.
They all had that distinct gamey flavor, and nearly the same levels of juiciness and tenderness. While a marbling score 9+ Denver steak from stone axe might LOOK more impressive, you would be hard pressed to tell the difference in a blind taste test. So why pay more for the same experience?
With most other cuts, there are noticeable differences. Not with the Australian Wagyu Denver. This BMS 6-7 Denver from Margaret River is exceptional and can be made a variety of ways: Pan sear, grill, KBBQ method. You can even make some of the best Galbi you’ve ever had with it.
